Rye Cookies


What you need:

  • 1 lb bittersweet chocolate

  • 4 Tb butter

  • 4 large eggs

  • 1 cup brown sugar

  • 1 Tb vanilla

  • 3/4 cup rye flour

  • 1/2 tsp salt

Directions:

  • Melt chocolate & butter in a double boiler

  • Whisk eggs and sugar to 3 times volume, slowly adding sugar

  • Add to egg mixture the chocolate mixture, then vanilla

  • Combine dry ingredients then add to chocolate/egg mixture

  • Dough will be very soft. Refrigerate for 30-60 minutes to firm up.

Preheat oven to 350 F.

Scoop out dough in to small balls, bake 8-10 minutes.
