Pea Shoot Pesto w/Lamb Loin Chops


What you need:

  • PESTO:

  • 3/4 c. pine nuts

  • 3 c. pea shoots

  • 1/2 c. fresh cilantro

  • 1/4 c. grated Parmesan

  • 2 cloves garlic, chopped

  • 3/4 tsp. kosher salt

  • 1/3 c. extra virgin olive oil

  • LAMB Chops:

  • 6 lamb chops

  • 2 Tbls. olive oil

  • 1 Tbls. balsamic vinegar

  • Handful of pea shoots for dressing

Directions:

  • Add all Pesto ingredients except olive oil in a food processor. Pulse ingredients while slowly adding olive oil. Continue to pulse until the mixture is well blended and smooth. Set aside.

  • Coat a skillet with olive oil and bring to medium heat. Sear lamb chops for 2-3 minutes on each side. Add balsamic vinegar and cook one additional minute per side. Remove lamb chops and spoon pesto on top of each chop. Dress with pea shoots.
