Pea Shoot Pesto w/Lamb Loin Chops

What you need:
PESTO:
3/4 c. pine nuts
3 c. pea shoots
1/2 c. fresh cilantro
1/4 c. grated Parmesan
2 cloves garlic, chopped
3/4 tsp. kosher salt
1/3 c. extra virgin olive oil
LAMB Chops:
6 lamb chops
2 Tbls. olive oil
1 Tbls. balsamic vinegar
Handful of pea shoots for dressing
Directions:
Add all Pesto ingredients except olive oil in a food processor. Pulse ingredients while slowly adding olive oil. Continue to pulse until the mixture is well blended and smooth. Set aside.
Coat a skillet with olive oil and bring to medium heat. Sear lamb chops for 2-3 minutes on each side. Add balsamic vinegar and cook one additional minute per side. Remove lamb chops and spoon pesto on top of each chop. Dress with pea shoots.
