Creamy Potato Kale Sausage Soup

This recipe has a wonderful kick with the red pepper flakes. Enjoy on a cool spring or fall evening!

What you need:

  • 1 lb. Italian sausage, casings removed

  • 4 C half and half

  • 3 C cubed new potatoes

  • 2 C low sodium chicken broth

  • 2 C whole milk

  • 1/2 tsp. oregano

  • 1/2 tsp. red pepper flakes

  • 1/2 tsp. ground black pepper

  • 2 C coarsely chopped leafy greens (kale)

Directions:

  • Crumble sausage in stockpot until brown, remove grease and discard.

  • Stir half & half, chicken broth, milk, oregano and red pepper flakes into sausage.

  • Bril to boil, reduce heat to simmer.

  • Simmer until potatoes are tender, about 30 minutes.

  • Season with pepper, stir in kale.

  • Simmer an additional 10-15 minutes until kale is tender.

  • Enjoy!
