Southern Style Collard Greens
In case you've been wondering what the heck to do with those collards, here's a good Southern recipe. Recipe halved from original, serves 4-6. Courtesy of Southern Living
What you need:
6 bacon slices, finely chopped
1 medium-size sweet onions, finely chopped
1/4 pound smoked ham, chopped
3 garlic cloves, finely chopped
48-oz. chicken broth
1/2 lb. fresh collard greens, washed and trimmed
1/4 cup apple cider vinegar
1/2 tablespoon sugar
1 teaspoon salt
3/4 teaspoon pepper
Directions:
Cook bacon in a large stockpot over medium heat 10 to 12 minutes or until almost crisp. Add onion, and sauté 8 minutes; add ham and garlic, and sauté 1 minute. Stir in broth and remaining ingredients. Cook 1 hour or to desired degree of tenderness (check at 45 minutes).
