Southern Style Collard Greens

In case you've been wondering what the heck to do with those collards, here's a good Southern recipe. Recipe halved from original, serves 4-6. Courtesy of Southern Living

What you need:

  • 6 bacon slices, finely chopped

  • 1 medium-size sweet onions, finely chopped

  • 1/4 pound smoked ham, chopped

  • 3 garlic cloves, finely chopped

  • 48-oz. chicken broth

  • 1/2 lb. fresh collard greens, washed and trimmed

  • 1/4 cup apple cider vinegar

  • 1/2 tablespoon sugar

  • 1 teaspoon salt

  • 3/4 teaspoon pepper

Directions:

  • Cook bacon in a large stockpot over medium heat 10 to 12 minutes or until almost crisp. Add onion, and sauté 8 minutes; add ham and garlic, and sauté 1 minute. Stir in broth and remaining ingredients. Cook 1 hour or to desired degree of tenderness (check at 45 minutes).
