Red & Gold Beet Salad

This recipe is from Macheesmo, a funny guy on the web with lots of tasty, easy recipes. Roasting beets bring out their true flavor ~ little sugar bombs! Enjoy!

What you need:
3 large red beets
3 large golden beets
2-3 Cups of spinach
Goat Cheese
Olive oil
Pistachios, optional
A pinch of salt, flaky sea salt or kosher salt would be best
Directions:
Remove the greens (save to saute in olive oil, they are delicious!), bottoms and give the beets a light scrub
Lightly coat beets with olive oil and bake 1 hour at 400 degrees
Let cool, then peel with a pairing knife, this goes quicker than you think but be careful ~ red beets stain
On a large serving plate lay out the spinach. Cut the beets into flat disks and arrange on the spinach (caution, the red beets will stain the gold ones so keep separate if presentation is important).
Drizzle with olive oil, sprinkle with sea salt and crumble goat cheese on top. If you're feeling adventurous add chopped pistachios for a final flare.
