Asian Cucumber Salad

Cucumbers are one of the true wonders of summer! Even though they are mostly water they pack a ton of vitamins and minerals AND they don't require cooking. Eat them raw, slice them up for refreshing cucumber water or mix with aloe and sooth your skin. Here's an easy recipe that will get you eating more and more cukes! Enjoy!

What you need:
1 tablespoon soy sauce
1/4 cup rice vinegar
1 teaspoon sesame oil
1 teaspoon sugar
1 teaspoon red pepper flakes
2 cucumbers, thinly sliced
1 red bell pepper, thinly sliced
1 candy onion, thinly sliced
Directions:
In a medium bowl, whisk the soy sauce, vinegar, oil, sugar, and red pepper flakes. Stir in the cucumbers and red bell pepper. Chill before serving.
