Squash Crab Cakes


This recipe comes from Andrew Packett of Richmond County. He shared it during my tenure at the Northern Neck Food Bank as we were drowning in yellow squash. It is fantastic and a fun twist on the summer's bounty. Here's a great hint I learned from a friend at the stand last weekend ~ GRIND your Panko, it will really stick to the patties. Enjoy!

What you need:

  • 2 C grated Yellow Squash (2-3 small)

  • 2 Eggs

  • 1 C seasoned Bread Crumbs

  • 1 T Mayonnaise

  • 2 T finely chopped Onion

  • 1 ½ tsp Old Bay Seasoning

  • 2 C Cracker Meal (purchased or use crushed Saltine Crakers or Panko – hint, grind your Panko!)

  • ¼ C high heat Oil (Sunflower, Peanut)

Directions:

  • Mix squash, eggs, bread crumbs, mayonnaise, onion and Old Bay Seasoning together and pat into cakes. It’s best to refrigerate for a couple of hours so cakes can absorb the Old Bay Seasoning. Roll cakes in cracker meal and fry until done.
