Zucchini Pudding


Alright, I admit it ~ when I heard "zucchini pudding" my first thought was, no thanks. It sounded like a recipe from someone with too much zucchini on their hands! But then I tried it and wow, what a wonderful way to enjoy a sweet veggie (okay, fruit) that is plentiful this time of the year. Be brave, give it a go and then thank Susan H. for sharing! P.S. ~ after trying I found some great "clean" versions out on the web. They're also delicious!

What you need:

  • 3 cups zucchini, peeled, cooked, mashed

  • ½ cup milk

  • 1 stick butter

  • 2 eggs

  • ½ - 1 cup sugar

  • 1 tsp lemon extract

  • ½ cup coconut

  • Dash of salt

Directions:

  • Mix all together, pour in buttered baking dish. Sprinkle with coconut and nutmeg. Bake at 350, 30-40 minutes.
