Breakfast Fried Green Tomatoes

Last weekend at the stand my friend Tina mentioned that husband loves Fried Green Tomatoes for breakfast. Breakfast? Tell me more! Well, I fried some up this week while my folks were visiting and wow, were were hooked! It a great excuse for eating bacon and sausage and, of course, using the grease to fry up the tomatoes. Give it a try and enjoy!

What you need:
4 green tomatoes, sliced 1/4 inch thick
1 egg
1/2 cup milk
3/4 cup flour
2 tablespoon brown sugar
Vegetable oil (or bacon grease), for frying
Directions:
Slice tomatoes into thick slices. In a bowl mix the egg and milk into a frothy liquid. On a plate mix the flour and brown sugar.
Dunk the tomato slices into the egg mixture and then dredge into the flour/sugar. When you have about 6 tomato slices ready, place into a skillet with hot bacon grease and fry for about 2-3 minutes on each side. The flour/sugar mixture should brown and caramelize.
Store the tomato slices in a warm toaster oven until breakfast is served. Sweet & Tangy all at once, enjoy!
