Ramen Cabbage Salad


This salad feels like a little bit of a cheat (anytime I buy a package of ramen soup I feel that way) but its simple and delicious. The noodles make give it the crunch you want but be sure to serve quickly, the crunch won't hold long after tossing with the seasonings. Enjoy!

What you need:

  • 1/2 large head cabbage, coarsely chopped

  • 2 small carrots, julienned

  • 1/2 green bell pepper, julienned

  • 1 (3 ounce) package ramen noodles, crushed

  • 1/2 cup slivered almonds

  • 1/2 cup vegetable oil

  • 3 tablespoons white sugar

  • 3 tablespoons distilled white vinegar

Directions:

  • Toss together the cabbage, noodles and carrots, bell pepper, almonds.

  • Whisk together the ramen flavor packet (vegetable flavor), oil, sugar and vinegar. Pour over cabbage mixture and toss evenly to coat.
