Grilled Vegetable Kabobs


There's no better way to get all the joys of summer in one place, a single skewer. This isn't the most unique recipe but in the summer I can't eat enough of grilled vegetables on a skewer. Reminder: if you're using wooden skewers soak them a few minutes before loading. This will ensure they don't catch on fire during cooking. Enjoy!

What you need:

  • 2 cups mushrooms

  • 1 cup cherry tomatoes

  • 1 red bell pepper, cut into chunks

  • 1 green bell pepper, cut into chunks

  • 2 candy onions, cut into chunks

  • 1 zucchini, sliced into thick rounds

  • 1 yellow squash, sliced into thick rounds

  • Basil leaves - green & purple

FOR THE MARINADE

  • 1/4 cup olive oil

  • 3 cloves garlic, pressed

  • Juice of 1 lemon

  • 1/2 Tblsp oregano

  • 1/2 Tblsp basil

  • Kosher salt and freshly ground black pepper, to taste

Instructions:

  • In a small bowl, whisk together olive oil, garlic, lemon juice, oregano and basil; season with salt and pepper, to taste.

  • Thread vegetables and basil leaves onto skewers. Brush olive oil mixture onto the skewers and let sit for 10-15 minutes.

  • Place skewers onto hot grill, turning every few minutes for about 8-10 minutes. Coat vegetables with excess marinade as you turn the skewers. (Alternatively you can cook the skewers on a cookie sheet in a 400 degree oven for 10-12 minutes)

  • Serve immediately
