Roasted Cantaloupe

Hmmmm....really? Roasted cantaloupe sounds a little odd but this recipe is from the cooking bible, aka, The Joy of Cooking so it must be delicious. What a wonderful way to enjoy your favorite fruit and kick it up a notch. Enjoy!

What you need:
1 cantaloupe
2 Tbls sugar (vanilla sugar, if you have)
Instructions:
Preheat oven to 400 degrees F
Line a baking sheet with parchment. Wash, cut cantaloupe in half and remove the seeds.
Cut into wedges and then cubes. Toss cubes with sugar.
Roast until melon begins to shrivel and carmelize, about 20 minutes.
Cool completely. Serve over oatmeal, yogurt, ice cream, etc.
