Roasted Cantaloupe


Hmmmm....really? Roasted cantaloupe sounds a little odd but this recipe is from the cooking bible, aka, The Joy of Cooking so it must be delicious. What a wonderful way to enjoy your favorite fruit and kick it up a notch. Enjoy!

What you need:

  • 1 cantaloupe

  • 2 Tbls sugar (vanilla sugar, if you have)

Instructions:

  • Preheat oven to 400 degrees F

  • Line a baking sheet with parchment. Wash, cut cantaloupe in half and remove the seeds.

  • Cut into wedges and then cubes. Toss cubes with sugar.

  • Roast until melon begins to shrivel and carmelize, about 20 minutes.

  • Cool completely. Serve over oatmeal, yogurt, ice cream, etc.
