Cucumber, Tomato, Purslane Salad

Who can't resist something new? Not me! My new "fave" is Purslane. After popping a few pieces of this beautiful succulent into my mouth and discovering its lemony flavor, I'm hooked. What you need:
1 large cucumber, peeled, seeded and chopped
1 medium tomato, chopped
1 bunch purslane, thick stems removed, leaves chopped, (about 1/2 c.)
1 minced seeded jalapeno chile pepper
2-3 Tbsp fresh squeezed lemon juice
Salt to taste
Instructions:
Combine all ingredients in a serving bowl. Salt to taste.
