Cucumber, Tomato, Purslane Salad


Who can't resist something new? Not me! My new "fave" is Purslane. After popping a few pieces of this beautiful succulent into my mouth and discovering its lemony flavor, I'm hooked. What you need:

  • 1 large cucumber, peeled, seeded and chopped

  • 1 medium tomato, chopped

  • 1 bunch purslane, thick stems removed, leaves chopped, (about 1/2 c.)

  • 1 minced seeded jalapeno chile pepper

  • 2-3 Tbsp fresh squeezed lemon juice

  • Salt to taste

Instructions:

  • Combine all ingredients in a serving bowl. Salt to taste.
