Herbed Zucchini & Carrot Salad

Another easy way to get all the freshness of summer onto your plate, this salad is sure to become your new go-to summer recipe. And nearly all the ingredients are available at the Dug In farm stand. It doesn't get any easier or tastier! Enjoy and thank you to Kim Diaz for sharing.

What you need:
2 large zucchini, spiralized (use a vegetable peeler if you don’t have a spiralizer)
1 large carrot, shredded
2 tablespoons extra-virgin olive oil
1 garlic clove, minced
1 teaspoon dill
5 leaves of mint, torn
½ lemon, juiced
Sea salt and pepper
1 avocado, sliced
Directions:
Add all ingredients except avocado to a large bowl. Mix thoroughly. Top with sliced avocado. Serve chilled and enjoy. Serves
