Zucchini, Yellow Squash & Garbanzo Beans w/Brown Rice

This is one of the easiest recipes for enjoying summer produce you'll find and a taste of Kim Diaz's wonderful recipes included in her seasonal cleanse. Treat yourself and pick up fresh herbs (oregano, thyme, basil, rosemary) to add as a seasoning. Nothing but fresh and clean eating!

What you need:
1 tablespoon coconut oil
1 small onion, chopped
2 zucchini, chopped
2 yellow squash, chopped
2 garlic cloves, minced
1 teaspoon Italian seasoning
1 15-ounce can garbanzo beans, drained and rinsed
Sea salt and pepper
Directions:
Add coconut oil to a hot pan. When the oil is hot, add the onion and sauté for about 3 minutes until translucent. Next, add the zucchini, yellow squash, garlic, Italian seasoning, garbanzo, beans, sea salt, and pepper. Sauté for an additional 5 minutes until the vegetables are tender. Serve over brown rice.
