Zucchini, Yellow Squash & Garbanzo Beans w/Brown Rice


This is one of the easiest recipes for enjoying summer produce you'll find and a taste of Kim Diaz's wonderful recipes included in her seasonal cleanse. Treat yourself and pick up fresh herbs (oregano, thyme, basil, rosemary) to add as a seasoning. Nothing but fresh and clean eating!

What you need:

  • 1 tablespoon coconut oil

  • 1 small onion, chopped

  • 2 zucchini, chopped

  • 2 yellow squash, chopped

  • 2 garlic cloves, minced

  • 1 teaspoon Italian seasoning

  • 1 15-ounce can garbanzo beans, drained and rinsed

  • Sea salt and pepper

Directions:

  • Add coconut oil to a hot pan. When the oil is hot, add the onion and sauté for about 3 minutes until translucent. Next, add the zucchini, yellow squash, garlic, Italian seasoning, garbanzo, beans, sea salt, and pepper. Sauté for an additional 5 minutes until the vegetables are tender. Serve over brown rice.
