Massaged Kale Salad

This salad has so much to love ~ it is easy, delicious and the ONLY salad I know of that is even better the next day. No wilting or sogginess in the kale. By the way, my friend is a little upset that I've shared his "go to" easy picnic salad so make sure you don't bring it to any parties he's invited to!

What you need:
2 bunches kale
1/4 teaspoon kosher salt
1/3 cup extra-virgin olive oil
1/4 cup lemon juice
3 large cloves garlic, minced
1/2 cup freshly grated Parmesan cheese
1/2 teaspoon freshly ground pepper
1/4 cup raisins or dried cranberries
1/4 cup chopped nuts (walnuts, almonds, pine nuts)
Directions:
De-stem the kale and tear into small bite size pieces. In a large bowl mix the kale, kosher salt and olive oil. Massage the kale mixture with your hands for 5-10 minutes, softening the kale slightly. Add lemon juice, garlic, Parmesan cheese (holding back 1 Tbsp) and pepper. Massage for another 2 minutes or so.
Mix in fruit and nuts. Top with remaining Parmesan cheese. This salad has a wonderful texture and flavor and is so easy!
