Mark Earley's Squash Saute


Mark Earley was Virginia's former attorney general and the son of an prolific gardener. He was a longtime supporter of the Right to Farm Act and believes that farmers are the original stewards of our environment and open spaces. Here's to Mr. Earley and his great squash recipe!

What you need:

  • 1 Tbsp butter

  • 2 Tbsp extra-virgin olive oil

  • 1 large onion, thinly slices

  • 1/4 c. white wine

  • 2 yellow squash, thinly sliced

  • 2 zucchini, thinly sliced

  • 1 Anaheim pepper, finely chopped

  • 2 cloves garlic, minced

  • 1 c. diced fresh tomatoes

  • Salt & Pepper to taste

  • Freshly grated Parmesan cheese

Directions:

  • Heat butter and olive oil in a large skillet. Add onion, cook until tender, stirring often. Add wine and deglaze the pan. Add squash and zucchini, saute until almost tender. Add Anaheim pepper, garlic, and tomatoes, cook another minute. Add salt and pepper to taste, garnish with cheese. Serves 4.
