Pasta w/Radishes & Blue Cheese

Winter radishes are so much fun. They are a great spice in your foods and every 30 days you can have a new crop. This recipe is great for using the whole of the radish with a warming pasta. Enjoy!

What you need:
4 bunches radish greens
1 Tbls extra-virgin olive oil
4 slices bacon, chopped
1 onion, chopped
5 garlic cloves, sliced
black pepper
salt
8 oz. crumbled blue cheese
2 Tbls unsalted butter or cream
1 bunch radishes (no greens)
1 lb. spaghetti
1 c. toasted bread crumbs
Instructions:
Saute radish greens in a skillet with 1 tablespoon olive oil, about 2 minutes. Greens should be bright green. Remove greens from skillet.
In the same skillet, cook bacon over medium heat about 5 minutes or until brown. Add onion and garlic, salt and pepper. Stir occasionally until onion is golden, about 8 minutes. Remove skillet from heat and add the greens, blue cheese and butter.
Cook the pasta until al dente. While cooking pasta, slice radishes thinly.
Drain pasta, reserving 1 cup of water. Add to pasta to skillet, tossing pasta and sauce with tongs. Add some of the reserved water for a thinner sauce. Season to taste with salt and pepper.
Top the dish with bread crumbs and radishes. Serve immediately.
