Oyster Rockefeller Casserole


Can't get enough of oysters but not sure how to make a meal out of them? We've got the solution! This casserole will leave you full and delighted, and remember, oysters are ALWAYS in season! Enjoy!

What you need:

  • 1 lb fresh spinach

  • 2 bunches green onions, minced

  • 1/2 cup parsley

  • 1/2 cup celery, minced

  • 1 clove garlic, minced

  • 1/2 oz. Pernod (or use anise seeds)

  • 3/4 tsp. Tabasco

  • 1 tsp. Worcestershire

  • 1 Tbsp anchovy paste

  • 1 cup bread crumbs

  • salt and pepper

  • 1 1/2 pints oysters

  • 3/4 stick butter

  • 1/4 cup Parmesan

Directions:

  • Mix 1st 9 ingredients, add 3/4 cup bread crumbs, salt and pepper. Mix in oysters and butter. Put in large casserole, top with remaining crumbs and Parmesan. Dot with butter and bake 350 for 45 minutes.
